This cottage pancake recipe makes fluffy and tender on the inside pancakes. Cottage cheese adds a tad of tart and sweet flavor with tons of healthy protein! All it takes is 3 ingredients to make this French toast like delicious pancakes worthy of brunch!

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup full fat cottage cheese
  • 2 large eggs
  • Pinch of salt

Instructions

    1. Add all the ingredients into the blender. Blend on high speed until everything is combined. This should take about 30 seconds. The texture will be quite thin, but there may be some chunks.
    2. Heat a nonstick pan on medium heat. Pour about two tablespoons worth of batter onto the pan. Leave enough space between each pancake.
    3. Cook the pancakes until the cottage cheese pancakes’ edges are set and have a golden bottom. Flip the pancake carefully and cook for another minute or two.
    4. Place the first batch of pancakes on a plate, and repeat the steps until you use up all the batter.
    5. Add whatever toppings you like to the pancakes, and have a delicious breakfast!
