Ingredients

  • 1 lb Baby potatoes
  • 1 tsp powdered garlic
  • 2 tbsp fresh herbs (parsley, dill, and chives)
  • OPTIONAL
  • 1 tbsp salt + 1tsp salt
  • 2 tbsp olive oil

Instructions

  1. Boil the baby potatoes.
  2. Drain them and allow them to dry out.
  3. Place them on a baking sheet that has been oiled.
  4. Using the bottom of a glass, gently press down on the potatoes until they are mashed.
  5. Finish the mashed potatoes with a drizzle of olive oil and a pinch of salt and garlic.
  6. Preheat the oven to 450°F and bake for 25 minutes.
